SPICY PEANUT SAUCE & SALAD DRESSING

Absent any sugars or sweeteners, this is a brighter alternative to the cloying bottled sauces. A food processor or blender makes this recipe simple. Try with stir-frys or as a dressing with Thai inspired salads and wraps.

ingredients

  • 4 Oz (1/2 cup) Peanut Butter, natural preferred
  • 1/2 cup Coconut Milk
  • 1/4 cup Fresh Lime Juice
  • 1 Oz (about 1 cup chopped) Fresh Herbs, such as basil, cilantro, and/or chives
  • 2 Tablespoons Siracha or other hot sauce, approximate, to taste
  • 1/2 Teaspoon (3 grams) Table Salt, approximate, to taste

Place all ingredients into a food processor or blender and process until smooth.

  • Coconut milk separates. Be sure to shake the can before measuring.
