GRILLED VEGETABLES & NOODLES

For an at-home "stir-fry" that rivals your favorite Asian restaurant, break out the grill! A grill basket is essential for this endeavor and makes this dish much easier. I add eggs for protein because I always have them, but grilled tofu is an obvious vegan substitute.

ingredients

  • 2 Pounds of Vegetables, such as broccoli, zucchini, mushrooms and/or peppers thickly sliced
  • 5 Tablespoons of Vegetable Oil, divided
  • 1 Teaspoon (6 grams) Table Salt
  • 4 Eggs, scrambled with a sprinkle of salt and pepper
  • 1 Oz (about 1  cup) Fresh Herbs, chopped, such as basil, cilantro, or chives
  • 14 Oz Rice Noodles, cooked per package instructions
  • 8-10 Oz (1 - 1 1/4 Cups) Thai or Chinese stir-fry sauce of choice (store bought or homemade)

  • Putting the sauce on after grilling keeps the sauce from leaking from the grill basket and cooling the flame.
  • Try making your own Spicy Peanut Sauce.
  • Substitute about 7 oz of grilled tofu for the eggs.

Preheat grill to about 400 degrees.

In a large mixing bowl, mix vegetables with 3 tablespoons of the oil and salt. Place grill basket on grates over direct heat.  Using a grill proof (metal) slotted spoon, transfer the vegetables to the basket. Using a slotted spoon helps to strain any juices and keeps those juices from being transferred onto the grill and squelching the flame. 

Cook for about 15 minutes, stirring and checking every 5-7 minutes, or until vegetable are just tender and a little charred. Actual time can be more or less depending on how hot the grill is. If you find that the vegetables are getting scorched before they are cooked through, turn down the heat or move basket to a cooler section of the grill.

 

Place 2 tablespoons of oil in an oven-safe dish or pan and place on grill grate over direct heat. Drop a bit of egg into the dish, it's ready when the egg sizzles. Pour the scrambled egg into dish or pan, stirring constantly until egg is cooked. Alternatively, you can cook the egg over the stove. Put the oil in a non-stick stir-fry pan and heat over high. When the oil starts to smoke, add egg and stir constantly until cooked.

 

Blend together eggs, vegetables, and herbs. Add prepared noodles and sauce and mix well.
