Full of protein and electrolytes, these little treats are excellent for post workout, post yard work, or anytime you need a nutrition boost. Rescue those spotted bananas from becoming compost! Using a ratio of 2 tablespoons of peanut butter to 1 banana, you can even save just a few.

22 oz (1 1/2 cups, 6-7) Bananas, very ripe
6 oz (2/3 cup) Peanut Butter
1/4 Teaspoon Table Salt, approximate, to taste
Milk, dairy or non-dairy, if needed
Sweetener (sugar, honey, sucralose), if needed, to taste
Coating, optional
8 oz Chocolate, of choice
2 oz (1/4 Cup) Coconut Oil, virgin or refined
Sprinkles, Chopped Nuts, or Toasted Coconut, optional

The basic ratio is 1 banana to 1 ounce (2 tablespoons) of peanut butter. Scale up or down and add salt or sweetener, if needed, to taste.
For a coconut flavored chocolate coating, use virgin/unrefined coconut oil. For a neutral flavor, use refined.
the method
In a blender, add your bananas, peanut butter, and salt and blend on high, pausing to scrape as needed, until liquified. If your bananas are very ripe, they should puree without issue, but if they’re not moving, you can add a little milk (dairy or non-dairy) to get it moving. If needed, blend in more salt or sweetener to taste. Keep in mind the flavor will taste less sweet once frozen.
Pour into popsicle molds and freeze for about 4-8 hours or until completely frozen. How long you need to freeze depends on the size of your molds. To unmold pops, either dip the molds in a large bowl filled with hot water or run under hot water. The exteriors will be slightly melted; pop them back into the freezer for a few minutes or until completely frozen.
In a narrow cup that can accommodate your pops (I’m using an 8 oz jam jar), microwave chocolate 30 seconds at a time, stirring in between, until just liquified. Blend in coconut oil. If using sprinkles, have them ready on a plate. Prepare a baking sheet or plate lined with wax paper, parchment, or silicone. Dip your pop into the chocolate and then immediately coat with sprinkles. Place onto prepared sheet. Repeat with each pop and freeze until firm. Store in a freezer bag in the freezer.
