BUTTERMILK & HERB DUMPLINGS

Finally, a fluffy and biscuit-y dumpling that I can love! These dumplings from J. Kenji López-Alt at Serious Eats were part of his leftover turkey and dumpling dish, but they pair perfectly with vegetarian stews too. Without the oppressive doughy interior that plaques many recipes, this one is definitely a keeper.

ingredients

  • 6.77 Oz (1 1/2 cups) White Flour

  • 1 1/2 Teaspoons Baking Powder

  • 1/2 Teaspoon Table Salt

  • .5 oz (1/4 cups) Fresh Parsley, minced

  • Fresh Ground Black Pepper

  • 1.5 ounces (3 Tablespoons) Unsalted Butter, melted

  • 4 ounces (1/2 Cup) Buttermilk, room temperature

  • 1 Egg, room temperature

 

the method

In a large bowl, mix together flour, baking powder, salt, parsley, and black pepper. In a smaller bowl, whisk together buttermilk, melted butter, and egg. Pour buttermilk mixture over flour mixture. Stir together just until flour is incorporated.

Bring stew or soup to a bare simmer. Using a teaspoon or small cookie scooper, drop dough into broth. Cover and steam for about 15 minutes while maintaining a simmer. Dumplings are done when an inserted toothpick come out clean.
