CHERRIES & CREAM SMOOTHIE SODA (WITH INFIZZ FUSION)

A smoothie disguised as a soda! Unfortunately, this is the sort of recipe that relies on a very specific piece of equipment- the Breville Infizz Fusion. But if you have one, this recipe will give your machine more mileage. For this soda, you can keep it light and go easy on the sweetener and omit the cream. And when you’re craving a treat, bring on the whipped cream.

ingredients

makes two 12 oz smoothies

  • 12 oz (1 1/2 cup) Green, white, or herbal tea of choice, or water, cold

  • 12 oz Cherries, sweet or sour

  • 1 Teaspoon Vanilla Extract

  • 1 -2 oz (2-4 Tablespoons) Honey or other sweetener, optional, approximate, to taste

  • Cream, half-n-half, milk, coconut milk, or kefir, optional, for topping up

  • Whipped cream or ice cream, optional for topping up

  • Experiment with herbal teas and green and white blends to add a background herbaceous note.

  • Use more sweetener with sour cherries and less with sweet ones.

Add tea or water, cherries, and vanilla to blender pitcher and puree for about a minute. Make sure that the mixture is at least 45F . If not, refrigerate; beverage should be cold for best carbonation. Using the Infizz’s funnel and strainer, pour mixture into 1 L bottle until you hit the minimum line. If you’re not hitting the minimum line, add more tea or water. Do not go over minimum line! Reserve strained fruit solids. Press carbonation button 2-6 times per Breville’s instructions. Remove bottle from carbonator. Gradually slide the switch to the right to release the excess gas. Slide the switch back to the left if the bubbles rise too quickly. With smoothies, you may want to give the soda a few minutes to settle down. If desired, add reserved fruit solids back to soda. Serve with ice and if desired, top with milk of choice and/or whipped cream.
