INDIAN SPICED RICE

This tasty rice can be accompanied with your favorite Indian dish or as a side.

ingredients

approximate yield 4 cups cooked rice

  • 3 Tablespoons Oil
  • 1 1/2 Teaspoons Cumin Seeds
  • 1 Cinnamon Stick 
  • 3 Green Cardamoms
  • 3 Cloves
  • 1 Bay Leaf
  • 10.5 oz (1 1/2 cups) Brown Rice (basmati preferred), uncooked
  • 3 Cups Water (or 1 3/4 cups for a pressure cooker)
  • 2 Grams (3/4 teaspoon) Kosher Salt, approximate, to taste

Rinse rice and set aside. In a sauce pan heat oil over medium heat. Add spices and fry for about a minute or until fragrant. Stir in rice and fry for about another minute or until the rice is fragrant.

 

Stir in 3 cups of water and salt. Bring to a boil. Reduce heat to low and cook for about 20 to 30 minutes or until the water has been absorbed.

Stir in 1 3/4 cups of water and salt. In my Aroma 2.5 Quart Pressure Cooker, I fill the water to the 1 1/2 mark. BE SURE NOT TO FILL YOUR PRESSURE COOKER MORE THAN 1/2 FULL!  Cook at 10 psi for 15-25 minutes or according to your pressure cooker instructions for brown rice.

Makes about 14 oz or 4 cups of cooked rice. Serve warm.
